Strawberry Chicken Salad
A bright and fresh salad, perfect for the spring and summer season!
Ingredients
- 1 lb Chicken breast – chunked
- 16 oz Baby spring mix
- 1 lb Strawberries
- 1/2 Cup Candied pecans
- 1 Cup Dry white quinoa
- 1/2 Cup Raspberry walnut dressing – Newmans Own
- To taste Black pepper
- To taste Garlic powder
- To taste Salt
- 1 Tsp Olive oil
Instructions
- Prepare quinoa according to intructions and set aside.
- While the quinoa is cooking, cook the chicken on medium heat with olive oil, salt, pepper, and garlic powder.
- Slice strawberries, roughly chop the pecans and toss the greens with dressing.
- Plate the dressed greens and top them with 1/4 of the quinoa, strawberries, chicken, pecans, and enjoy!
