Strawberry Chicken Salad

A bright and fresh salad, perfect for the spring and summer season!

Ingredients

  • 1 lb Chicken breast - chunked
  • 16 oz Baby spring mix
  • 1 lb Strawberries
  • 1/2 Cup Candied pecans
  • 1 Cup Dry white quinoa
  • 1/2 Cup Raspberry walnut dressing - Newmans Own
  • To taste Black pepper
  • To taste Garlic powder
  • To taste Salt
  • 1 Tsp Olive oil

Instructions

  • Prepare quinoa according to intructions and set aside.
  • While the quinoa is cooking, cook the chicken on medium heat with olive oil, salt, pepper, and garlic powder.
  • Slice strawberries, roughly chop the pecans and toss the greens with dressing.
  • Plate the dressed greens and top them with 1/4 of the quinoa, strawberries, chicken, pecans, and enjoy!
